With this year’s Breast Cancer Awareness month is behind us, we continue to look for creative ways to have pink reminders in our every-day-lives.
“Bebe-tartlets” are a delicious way to incorporate our favorite symbolic color, even though they are lesser known in the U.S. The pastry was first introduced in Finland in the early 1900’s by Svensson’s confectionery.
Ingredients
Dough:
2 sticks of butter
0,5 cup sugar
1 egg
1,5 cups flour
Filling:
3,5 tbs sugar
1 cup cream
2 tbs potato starch
2 egg yolks
¾ cup butter
2 tsp vanilla extract
Frosting:
1,5 cups powdered sugar
2-3 tbs water
Red food coloring
Sprinkles
Instructions:
For the dough:
- Beat butter and sugar until foamy. Using a mixer, mix in the egg and flour
- Grease 12 small tartlet pans and press dough onto the bottom and sides
- Bake shells at 350 degrees for about 10 minutes, until the edges are slightly colored
- Let cool in room temperature
For the filling:
- Mix the sugar and potato flour together in a saucepan. Add whipped cream and yolks
- Heat with a whisk, stirring, until the custard bubbles
- Cool in refridgerator
- Beat the butter until foamy, add vanilla extract
- Fill the shells and refrigerate until the cream filling has solidified
For the frosting:
- Mix powdered sugar and water into a smooth mixture. Color the frosting pink with food coloring.
- Pour an even layer of frosting on top of the custard
- Add sprinkles on top and keep refrigerated or frozen
